Mozzarella is a classic Italian cheese, originally made exclusively from buffalo milk, nowadays it is often replaced with cow milk, but classic Mozzarella is still made using black buffalo milk. Mozzarella cheese belongs to the category of soft young cheeses, the product matures in a few days. Mozzarella cheese has a spherical shape, bright white color, elastic and layered structure. In the production of Mozzarella cheese, lactic acid cultures are used for fermentation of milk, rennet is used for curdling, after the appearance of the cheese grain, it is heated and separated from whey.
