If you have diabetes, in many ways your diet is your medicine. As diabetes educators, we help patients understand what food and beverage choices are best to avoid. When foods are high in carbohydrates, fat and sodium, they increase your risk for high blood pressure, high cholesterol, weight gain, heart disease and uncontrolled sugar.

Top 10 offenders

  1. Sweetened drinks. These include regular pop/soda, fruit punches and iced teas. These are loaded with sugar and calories, and they usually have little or no nutritional value. Instead, try infusing plain water with different berries and fruits so you can enjoy the natural sweetness.
  2. “Designer” or specialty coffee drinks – including frappuccinos or cappuccinos. That “once a day special treat” can add up to lots of extra sugar, calories and saturated fat. Instead, go for straight java, either black, with artificial sweetener or a small splash of skim milk.
  3. Whole milk. It has too much fat, which can lead to weight gain. Switch to 2% , 1% – or even better: skim milk. Keep in mind that one cup of skim milk has 12 grams of carbohydrates. If you don’t like milk or are lactose intolerant, you can drink almond milk, rice milk or soy milk instead—but remember to get the low sugar varieties.
  4. Hot dogs. These grilled little favorites are still high in saturated fat and sodium—yes, that even includes turkey dogs! Try to avoid them or eat them only occasionally.
  5. Packaged lunch meats. These are also high in saturated fat and sodium. Check your deli for low sodium meats—or better yet use sliced meat that you’ve roasted at home to make your sandwiches. Also remember that sandwich toppings can be very unhealthy too (think high-fat mayonnaise). Instead add flavor to your sandwiches with mustard, veggies and/or a little bit of hummus.
  6. Sweetened cereals. These are high in carbohydrates because of the added sugar. Go for the plain cereals and add a little fruit or artificial sweetener.
  7. Regular pancake syrup. It’s very high in carbohydrates. Light or low-calorie syrup usually contains at least half the carbs of regular. And with these lighter syrups, remember that the serving size is still small. Take a look at the food label and use sparingly.
  8. Sherbet. Many people believe sherbet is a good alternative to ice cream, but a half cup of sherbet has almost double the carbohydrates of a half cup of ice cream.
  9. Fast food baked potatoes with all the fixin’s. You take a relatively healthy item—the plain baked potato—and add cheddar cheese, butter, sour cream, ranch dressing or bacon and it just turned into a high-sodium, fat laden disaster. The same goes for nachos and other cheese-covered appetizers when eating out.
  10. Anything fried. We know fried foods are not good for anyone. The fat is absorbed into the food and leads to high cholesterol and weight gain which can increase your risk of developing type 2 diabetes or worsen control if you already have diabetes. This goes for everything from French fries to fried chicken to that panko-crusted tilapia at your favorite restaurant. Try baking or broiling your food or even consider checking out the new air fryers that use hot air instead of oil. They are a healthier option than deep-fat fryers.

All of the foods on our list have a low glycemic index (which represents the total rise in a person’s blood sugar level after eating the food) and provide important nutrients you need to stay healthy.

  1. Sweet potatoes. A great source of vitamin C, potassium and fiber. Add cinnamon, cloves, nutmeg or allspice for extra flavor.  ½ cup cooked sweet potato = 1 carb serving

  4. Nuts. Especially walnuts, almonds and pecans. They are a great source of protein, vitamins, minerals, fiber, healthy fats and antioxidants and they reduce LDL cholesterol and promote heart health.  Consume in small amounts as they are high in calories. Add to salads, oatmeal and yogurt. If you are trying to watch your calorie intake, buy the 100 calorie packets in a box. They may cost a little more, but they help with portion control.  1 serving = 1 carb
  5. Berries. They are full of antioxidants, vitamin C and fiber. Add to salads, cereal, summer desserts and yogurt. 1 cup of strawberries, blue berries or raspberries = 1 carb serving

Health benefits of Cabbage

  • Natural bacteria are present on the leaves of cabbage, which can be used for fermentation (ie sauerkraut or kimchi). These create probiotics and are extremely healthy for gut health and influence the growth of beneficial bacteria.

Cabbage is a cruciferous vegetable very high in phytochemicals that has been linked to reduced risk for cancer and heart disease.

Most of these benefits have been seen in studies utilizing short-cooked methods – generally steamed or sautéed rather than microwaved.

Points for Consideration

Cabbage is high in sulfur and contains raffinose (a non-digestible sugar), which can result in bloating and gas. This is not necessarily a bad thing as gas production is indicative of healthy gut bacteria/flora but can be uncomfortable for some or socially awkward. Gas may be reduced by consuming cooked or fermented cabbage – such as sauerkraut. It is also recommended to slowly introduce and increment cabbage into your diet if you don’t consume it often at present.

There is a bit of controversy as to whether large amounts of cruciferous vegetable (cabbage, broccoli, onions, cauliflower, Brussels sprouts) can affect thyroid function as they may interfere with the body’s ability to absorb iron. In most cases though they aren’t an issue. However, if you do have thyroid problems, it would be best to monitor the amounts you consume and increase gradually.

Cabbage in the kitchen

Selection

Choose cabbage heads that are firm and dense with crisp and shiny leaves. Avoid many cracks and blemishes, though sometimes a few of these are unavoidable.

Storage

Cabbages should be kept cold refrigerated and wrapped tightly (such as in a plastic bag) until use, as it helps retain vitamin C content and other nutrients. Fresh cabbage will keep 1-2 weeks properly refrigerated. Do not cut until ready to use as the surface will begin to decay.

Uses

Pull off the outer leaves and discard. If the edges are a little brown, just slice them off.

Rinse cabbage well, spray with a water/vinegar solution (if cabbage is not organic) to remove as many pesticides or other chemicals used as possible, then rinse well again.

Cooking

If cooked, cabbage should not be cooked too long or at very high heat to retain nutrient benefits. Cabbage can be lightly steamed (and used as a ‘pasta substitute’ or as a wrap or roll), or sautéed lightly in olive or coconut oil and perhaps vegetable or chicken broth and vinegar.

Cabbage can also be eaten raw and combined with lemon juice, olive oil, turmeric, sea salt and pepper as a delicious slaw for a side dish.

Cutting Techniques

Cabbage is easy to cut!

First quarter the head, then slice downward, removing the core from each piece. Your next cuts will depend on what you are making with the cabbage. For large leaves to use as wraps, you may only want to halve the cabbage or leave it whole, peeling the leaves off carefully. For thin shreds (as in noodle substitute), slice very thinly in a downward motion. Cabbage also shreds extremely quickly in a food processor.

Cabbage, Sausage and Onions

Cabbage you say?  Yes and I can vouch that age 5 to 61 LOVE it in our house. The first thing Tommy asked me to make him when he came over after being gone to visit his dad for 5 weeks was this recipe.  I already had something else in mind even though there were some leftovers in the refrigerator.

It is sooooo easy to make and everyone in our family loves it.   Tori shared this recipe with me when she was experimenting with slow cooker recipes.  Last fall, we were on the hunt for great … not just good … low or no sugar, crock pot dinners for those nights when the kids have activities and no time to cook.  We could hardly believe how many recipes were out there that had LOTS of added sugar or were heavy on the starch. Tasting GREAT was harder to do.

Of course I tweaked it a little bit and its been a winner ever since.  We don’t even wait for school or cold weather.  We eat it year round.

Recipe type: Slow Cooker

  • 1 TBL butter
  • 1 small head of cabbage, cored and cut into slices (about 2 ½ pounds)
  • 1 large onion, halved and thinly sliced
  • 1 cup chicken broth
  • 2 tablespoon brown mustard
  • ½ tsp. kosher salt
  • ½ tsp. black pepper
  • 1 pound smoked sausage, cut into 1-inch pieces
  1. • Coat the slow cooker/crock with room temperature butter.
  2. • Core and slice the cabbage in one inch slices and then cut those in half.
  3. • Trim off the top of the onion slice. Place cut side on cutting board and cut in half through the root. The root will help you keep the onion layers together and much easier to slice in thin pieces. Slice into thin slices. Add the cabbage and onion to the crock.
  4. • Mix the chicken broth, brown mustard, salt and pepper. Pour over cabbage and onion, tossing so that the cabbage and onion are well coated with the broth mixture.
  5. • Top mixture with sausage.
  6. • Cover and cook on LOW for 4 hours; give mixture a good stir, then cook 1 hour more.
  7. • This is so good! Enjoy!

You can use your favorite sausage or kielbasa. If you like more onion then add it. I do!

You don’t have to but I add the brown mustard, salt and pepper to the broth and mix before adding to the cabbage and onion.

I actually left this in the slow cooker for Vic to manage when I left him home alone   to celebrate his sisters birthday last week.  Trust me, he didn’t stir it and cook another hour.  I had the timer on for 4 hours and then it stayed warm until he was ready.  I do not like the cabbage and onions to be mushy so this works and its still got texture for leftovers later in the week.

And yes, Tommy got his Sausage and Cabbage the next day for lunch!  The picture is actually his bowl of leftover yummy-ness!

I think after reading the nutritional facts about red cabbage I will make this next time with it.  That would be colorful and healthier!  I will post a picture when I do.

Boil cabbage leaves in salted water until a soft consistency is reached, cool. Fold the leaves in the form of envelopes, alternately dip them in an egg and breading, then send them to a frying pan.

  1. Cabbage cutlets with meat .
  • Cabbage (medium) – 1pc .;
  • chicken fillet / beef – 0.5 kg.;
  • flour – 2-3 tablespoons;
  • carrots – 2 pcs.;
  • bow – 2 pcs.;
  • Wheat bran / bread crumbs;
  • eggs – 1 pc.;
  • salt;
  • vegetable oil.
