Cabbage Soup Diet Review: What’s in It and What Experts Say

While many of the foods allowed in the cabbage soup diet are considered “healthy,” the principles of this eating plan aren’t. The diet may also pose short-term side effects, and possibly more serious consequences if you have any underlying health conditions.

Due to the high sodium content of the cabbage soup diet, dehydration is one short-term side effect. The diet may also be harmful to people with diabetes because it can destabilize blood sugar levels. (1)

Because the soup itself is also extremely low in calories, carbohydrates, protein, and fat, the Australian government’s Better Health Channel notes that you may experience: (9)

  • Headaches
  • Dizziness
  • Light-headedness
  • Nausea
  • Weakness
  • Fatigue

Additionally, the Academy of Nutrition and Dietetics warns that fad diets can cause: (10)

An important consideration is the lack of healthy fats in this diet. While you may be looking to get rid of body fat, dietary forms of fat are important for feeling full. Healthy fats, such as those found in fish, and nuts also contain important nutrients. “Essentially there is very little fat included in this diet because the only fat source comes from the beef, or milk if choosing whole milk,” says Rothenberg.

Perhaps one of the most concerning risks associated with fads like the cabbage soup diet is the havoc they can wreak on your metabolism. Indeed, they can lead you to gain weight when you go off of the plan. “I have had a client come to me and say they did the cabbage soup diet prior and it did ‘work’ in the short term, but she ended up gaining the weight back with an additional 5 lbs. the following week,” Rothenberg says.

Another consideration with fad diets such as the cabbage soup diet is that short-term weight loss of more than the recommended 1 to 2 lbs. per weeks is likely attributed to water weight, and not the coveted fat loss so many dieters are vying for. To put this in perspective, the University of Florida estimates that 10 to 15 lbs. of body fat is equal to between 40 and 60 sticks of butter, something that’s impossible to lose in a week’s time. It’s important to weigh the benefits against the risks carefully before trying out any new diet, but especially one as extreme as the cabbage soup diet, and ideally work with a registered dietitian-nutritionist when following it.

    Despite being called ‘The Cabbage Soup Diet’, surprisingly, you don’t just have to eat cabbage soup.  Although you do eat mainly cabbage soup, not many people realise that you can also have fruit, other veg and even some meat (on certain days).

    The cabbage soup diet has been a popular quick-fix diet for years due to claims that you can lose up to 10 pounds in a short period of time. But is it the right quick weight-loss plan for you?

    As the cabbage soup diet plan is an extreme diet that is incredibly restrictive,  you shouldn’t stay on it for more than one week. Like the 5:2 plan and other intermittent fasting diets, this restrictive diet plan is a good way to lose weight quickly but is not sustainable in the long-term. For long-term, sustainable weight loss, try healthier diets that you’re more likely to stick to, such as the high-protein diet or the medically recommended Mediterranean diet.

    What is the cabbage soup diet?

    The cabbage soup diet is an extremely low-fat, high-fibre diet that lasts seven days. The concept is fairly simple – you make and eat as much cabbage soup as you want. Generally people eat between two to three bowls a day.

    The idea is that your homemade cabbage soup (which carries virtually no calories) will help you feel full and aid some weight loss by stopping you snacking between meals.

    Whilst cabbage is key, you can eat other low fat foods whilst on the cabbage soup diet plan, says nutritionist Mina Khan, founder of Formulate Health:

    “The soup doesn’t only contain cabbage. Many recipes include green peppers, onions, mushrooms and other vegetables,” she tells us. “As well as cabbage soup, the diet allows you to start incorporating different fruits and vegetables in the first few days, and slowly reintroduces lean meats, dairy and rice towards the end of the 7 day program.”

    The cabbage soup diet is only designed as a kick-start to help you lose weight quickly.

    “The person following such a diet may see the effects, but a diet like this is not sustainable and should not be practiced for an extended period of time,” says dietitian Jasmine Carbon of Carbon Nutrition. This is because of its (unsurprising) cabbage focus and cutting out of other key food groups.

    Pros and cons of the cabbage soup diet

    Dietitian Jasmine Carbon points out cabbage’s nutritional benefits:

    “Cabbage is a great source of fibre essential for gut flora and bowel health,” she says. “Eating a portion of cabbage would count towards your 5 portions of fruit and veg a day.

    “However, it should be eaten as part of a balanced diet. This is not a diet I would recommend anyone to follow,” she adds.

    Jasmine is concerned with how restrictive the cabbage soup diet plan is, which in turn could affect your body both physically and mentally:

    “If done for a number of days the person could miss out on vital calories, protein, vitamins and minerals essential for the body to function and to allow you to carry out your day-to-day tasks.”

    Mina agrees that the diet’s focus can wreak havoc with your blood sugar levels. Leaving individuals feeling faint or weak and is particularly dangerous for those with diabetes.

    The cabbage soup diet also has a reputation for leaving you full of wind (lovely). This is because cabbage is high in fibre and can cause some digestive issues for those who aren’t used to consuming high quantities of fibre.

    “Expect to experience some gastro-intestinal discomfort such as bloating, gas build up, nausea and flatulence,” adds Jasmine. Diarrhoea is another common side-effect of the cabbage soup diet plan.

    Whilst weight loss can be expected (and seen as a pro of this diet), it’s worth noting that those who follow the cabbage soup diet will put the weight back on when they come off it.

    “In terms of weight loss, this diet could definitely help almost anyone to shed some weight within a few days,” says Mina. “However it’s crucial to bear in mind that this diet is not a sustainable way to lose weight in the long run, and will likely result in you regaining the weight you lose once you stop restricting your intake of normal foods.”

    Caitlin Fitzgerald, 54, from Morpeth, Northumberland, tried the Cabbage Soup Diet. But how did she get on? And did she lose any weight… ?

    “My husband’s work do was coming up and I wanted to fit back into a slinky black dress I’d had for years. I put off dieting until I only had a couple of weeks to go then suddenly panicked! The cabbage soup diet seemed a good way of losing weight fast.

    “I made a fresh batch of the cabbage soup every two or three days and followed the other bits of the plan, like eating lots of fruit and veg. Though I didn’t mind the cabbage soup to start with, by about day four, I’d gone right off it! I tried to make it more interesting by adding different veg and herbs but it didn’t make it much better.

    “It had rotten side effects too – my husband nearly ended up sleeping in the spare room I was so full of wind! But I stuck at it for a week and lost four pounds. I fitted into my little black dress but, to be honest, I’d put all the weight back on two weeks later!”

    Cabbage soup diet 7-day meal plan

    Day 1: You can eat as much fruit as you want (except bananas) along with unlimited cabbage soup, water and unsweetened tea and coffee.

    Day 2: Avoid fruit but eat raw veg and cabbage soup. You’re allowed a baked potato in the evening.

    Day 3: As much cabbage soup, fruit and vegetables as you like (excluding potatoes and bananas).

    Day 4: Unlimited cabbage soup. You can drink some skimmed milk and eat up to eight bananas.

    Day 5: Lots of cabbage soup and 565g of beef and six tomatoes. Makes sure you drink 6-8 glasses of water.

    Day 6: As much cabbage soup, beef and vegetables as you like (excluding potatoes).

    Day 7: Unlimited cabbage soup, a little brown rice and sugar-free fruit juice.

    Top tip: Spice up your soup by adding some cayenne pepper – it’ll make it taste better.

    Five steps to Cabbage soup Diet success:

    Cabbage soup diet recipe

    To make cabbage soup you will need:

    • 6 large onions chopped
    • 2 green peppers diced
    • 2 cans of tomatoes (diced or whole)
    • 250g mushrooms, sliced
    • 1 bunch celery, chopped
    • 1/2 head cabbage
    • chopped 3 carrots
    • sliced 1 package dry onion soup mix
    • 1 or 2 cubes bouillon (optional)
    • Salt and pepper
    • A pinch of Cayenne pepper, curry powder, mixed herbs or any other seasoning for added flavour

    How to make cabbage soup:

    1. Use spray oil to fry the chopped onions in a large pot.
    2. Add the green pepper pieces and cook for one min.
    3. Add the chopped cabbage leaves, sliced carrots, celery and mushrooms.
    4. Sprinkle over a little cayenne pepper or curry powder.
    5. Add 12 cups of water and any additional stock cubes.
    6. Cook over a medium heat until the vegetables is the vegetables are tender and the soup is the right consistency.

    Cabbage soup diet: Can it help with weight loss?

    The cabbage soup diet is generally considered a fad diet. As the name suggests, the diet requires that you eat large amounts of cabbage soup for seven days. During that time, you can also eat certain fruits and vegetables, beef, chicken, and brown rice, according to a set schedule.

    Proponents of the cabbage soup diet say it’s a good way to quickly lose a few pounds. You may lose weight on the diet because it drastically limits calories. But it is not only fat that you’ll lose. Any weight that you lose is likely to be a combination of water and fat, and may even include muscle.

    Because the cabbage soup diet is low in complex carbohydrates, protein, vitamins and minerals, you shouldn’t stay on it for more than a week at a time.

    The cabbage soup diet has other disadvantages. Depending on the recipe for cabbage soup, the diet can be high in sodium. The large amounts of cabbage also can make you more prone to flatulence.

    Because you’re not getting proper nutrition, you may feel weak or tired while on the diet. And once you stop the diet, it’s easy to regain any weight that you lost.

    Fad diets like this one may be tempting, but keep in mind that long-term weight loss depends on making lasting healthy changes in your eating and exercise habits.

It is also referred to as “Sacred Heart Memorial Hospital Diet”, “Cleveland Clinic Diet”, “Mayo Clinic Diet”, “Miami Heart Institute Diet”, and “Spokane Heart Diet”, simply because it originated in a hospital for rapid weight loss before surgery for heart patients. However, all these medical facilities disclaim any association with the diet.

    Even though you will mainly consume vegetables, the cabbage soup meal plan is not vegan, as it allows meat consumption.     7-Day Cabbage Soup Diet Grocery List

    4. Put the bouillon cubes and other seasonings such as spices, pepper, salt, hot sauce, and herbs.
    5. Allow the mixture to boil for about 10 minutes, then reduce heat and let it simmer for about 30 minutes until the contents are tender.

    Alternative Cabbage Soup Recipe


    • 1 cabbage head
    • 3 cups of crushed plum tomatoes
    • 6 green onions
    • 1 bunch of celery
    • 2 cups of fresh green beans
    • 2 lbs carrots
    Spices and herbs:
    • 2 green bell peppers
    • 18 teaspoons cayenne pepper
    • 2 teaspoons of paprika
    • 1 teaspoon of ground pepper
    • 2 teaspoons of chili powder
    • 1 teaspoon of coarse salt
    • 2.5 cups of pasta sauce
    • 1 small can of tomato paste
    • 2 cups of beef broth
    • 2 teaspoons of prepared mustard


    • In a large stockpot, mix the tomatoes, tomato paste, pasta sauce, and beef broth.
    • Put the pot over high heat. Cover and let it boil.
    • Reduce the heat and allow the mixture to simmer for about 15 minutes.
    • Wash and cut the green beans into about 1-inch length. Roughly cut the washed celery with tops, as well as the carrots and green pepper. Cut the green onions into small sizes of about 14-inch length.
    • Combine all these chopped vegetables into the simmering cooking pot. Stir and ensure that the contents mix well.
    • Add all the spices and herbs, then stir and simmer on low heat for about 60 minutes.

    Since the cabbage soup recipes differ, there is no standard set of nutrition facts. However, on average, a bowl has about 50 to 100 calories (15). Other than the calories, the cabbage soup alone contains:

    • Calcium: 64 mg
    • Carbohydrates: 14 g
    • Fiber: 3 g
    • Iron: 1.2 mg
    • Protein: 2 g
    • Potassium: 334 mg
    • Sodium: 1369 mg
    • Sugar: 8 g 
    • Vitamin A: 960 IU
    • Vitamin C: 51.9 mg

    Therefore, if you take six cups of this magical soup, each containing about 66 calories, you will be consuming a total of 396 calories only. Adding the low-calorie foodstuffs and beverages outlined above, you will consume about 860 calories. On the days when fish or chicken are allowed, your calorie consumption will be about 1030 (14).

    The soup is very high in sodium, and a cup contains about 3 to 5 grams of fiber from the vegetables used. The contents of most cabbage soup recipes offer about 5 grams of proteins, 13 grams of carbohydrates, and as little as 1 gram of fat (15).

    Note that you can take as much as you want of the above foods on specified days until you are satisfied. If after the 7 days you still have more pounds to lose, experts suggest you wait for a fortnight before repeating the eating plan (15). Following it for over a week will lead to the deficiency of some key nutrients. So it is recommended that you only follow it for a week to jump-start a healthy, long-term diet plan.

    The menu options are very limited, so you will get bored with this quickly. You will always feel hungry, weak, sometimes sick, lose concentration, feel lightheaded, irritable, and dizzy.


    7-Day Diet Weight Loss With Cabbage Soup: Expected Results

    Can cabbage help in weight loss? Yes. Cabbage itself is low in calories and high in nutrients, leading to weight loss. By following the simple cabbage soup eating pattern, you are likely to lose a lot of weight quickly.  

    How much weight can you lose on the 7 day cabbage soup diet? According to some sources, following this eating pattern can help one lose between 10-17 pounds in just a week! (11) However, the results are short-term. This is supported by the fact that when you severely restrict your calorie consumption, the body responds by lowering metabolism, minimizing the number of calories burnt in a day (10).  

    The 7 day cabbage soup diet is not a sustainable weight loss plan. Therefore, it does not have a lasting impact on high blood pressure, cholesterol, and heart diseases because you are likely to regain the lost weight. It is quite dangerous even if taken under a doctor’s supervision.

    How Is Weight Lost By Following The 7-Day Cabbage Soup Diet?

    The weighing scale will tip in your favor because this meal plan causes a massive calorie deficit in your daily diet (16). This limited menu will give you less than 1000 calories a day. Men are generally not recommended to consume fewer than 1500 calories per day, while the minimum is 1200 for females. Since you are taking much fewer calories, you lose most of your water weight rapidly. 

    Why does cabbage soup make you lose weight? This restrictive soup makes you shed several pounds because the severe reduction of calorie-intake leads the body to utilize fat as an energy source when calorie intake is very low. This burning of fat is what results in weight loss.

    Only 34% of the weight lost is from fat. The remaining 66% is from muscle mass and lost water weight. This water weight is from glycogen stores, where the body stores carbohydrates for energy. When you consume fewer calories than required, the body utilizes the reserve energy first before turning to fat, and also removes extra water stored with the glycogen.


    • This eating plan excludes exercises because it is a very low-calorie diet. Thus, working out at high levels is discouraged because you will be lacking enough fuel. It also does not encourage lifestyle changes, which means that once you get back to your usual diet, you may gain back the lost weight.
    • Rapid weight loss is not recommended by health professionals. The ideal weekly weight loss is 1-2 pounds, and this should be achieved by following a healthy weight loss diet, combined with exercises and a healthy lifestyle.

    The cabbage soup diet is a waste of time, but that doesn’t mean you have to write off cabbage entirely.

    As you can probably guess from the name, the cabbage soup diet involves eating a lot of cabbage soup. The motive? Quick weight loss, of course. (What else could inspire such unfathomable zest for a decidedly bland vegetable?)

    It’s hard to pinpoint when and where this diet started, exactly, but a 1996 article in The Washington Post noted that it had been around for at least 15 years at that point, placing its inception somewhere in the early 80s or late 70s.

    In the past, the diet was also referred to as the Sacred Heart Diet or the Mayo Clinic Diet, but it’s not associated with either of those health care systems.

    Like most fad diets, the cabbage soup diet is short-term and advocates claim it’s an easy way to lose weight. But let’s take a closer look at what the diet entails and some of the potential drawbacks.

    How Does the Cabbage Soup Diet Work?

    The original cabbage soup diet lasts for one week, during which you predominately eat cabbage soup, but you’re also allowed small amounts of fruit, vegetables meat and brown rice, according to the Mayo Clinic.

    If you stick to the diet over the course of a week, it’s likely you’ll lose weight because you’re following a very low-calorie meal plan. Proponents of the diet claim you can lose up to 10 pounds in just seven days.

    Why You Shouldn’t Try the Cabbage Soup Diet

    1. You’ll Lose Mostly Water Weight, Not Fat

    When you lose weight quickly over such a short period of time, it’s mostly water weight. So while you might feel less bloated, you won’t have lost any actual fat.

    Our bodies naturally hold onto water in our muscles, or more specifically in our glycogen (energy) stores. When we’re not eating enough calories to maintain our weight, we tap into those stores, which in turn releases that bound water, according to the Mayo Clinic.

    What does this mean? As soon you go back to eating normally after a week, you’ll gain back the water weight as your body replenishes its glycogen stores.

    2. It’s Too Low in Calories

    The cabbage soup diet is low in calories as well as fat and requires you to be focused on what you’re eating (and not eating), which may leave you cranky and craving other foods. You may also feel dizzy at times when eating at such a low-calorie level.

    One thing the cabbage soup diet does have going for it is that it’s centered around a really healthy food — cabbage.

    Cabbage can support your weight-loss goals, but you don’t have to slurp cabbage soup to get the benefits.

    The Health Benefits of Cabbage

    Like most vegetables, cabbage can support your weight-loss goals.

    Vegetables for the most part are low in calories and fat and typically high in fiber. In fact, a September 2015 PLOS Medicine paper assessed the effect specific fruits and vegetables have on weight change and the researchers found that cruciferous vegetables, including cabbage, have an inverse relationship with weight, more so than leafy greens.

    A cup of shredded cabbage has just 22 calories, per the USDA, but is an excellent source of vitamin K (56 percent Daily Value) and vitamin C (36 percent DV), and a good source of folate (10 percent DV). It also provides 2 grams of fiber.

    3. Linked to a Lower Risk of Cancer

    Cabbage belongs to the brassica family, which also includes Brussels sprouts, broccoli, cauliflower and kale. These veggies contain a compound called glucosinates, which some research has connected to a reduced risk of certain types of cancer (the research is not conclusive, though, according to the National Cancer Institute).

    All in all, cabbage is a great food to add to your weight-loss diet plan. Instead of cabbage soup, though, try these healthy, delicious recipes that showcase the nutrient-rich veggie.

    1. Sweet and Sour Acorn Squash with Cabbage

    Acorn squash and cabbage combine to pack heart health and weight-loss benefits into one dish.

    This recipe pairs cabbage with acorn squash, which is rich in beta-carotene. Observational studies suggest diets high in beta-carotene are associated with a reduced risk of cardiovascular disease, according to Oregon State University.

    These pita pockets are packed with fiber.

    These pitas are pockets of goodness made up of cabbage, garbanzo beans, onion, olive oil and spices, but what’s most impressive is that each pita packs 17 grams of fiber.

    Most of us are falling way short of our daily fiber needs. In fact, nine out of ten Americans don’t get enough fiber, according to a January 2017 study published the American Journal of Lifestyle Medicine.

    These pockets, on the other hand, provide 68 percent of women’s daily fiber needs and 47 percent of men’s, according to the Academy of Nutrition and Dietetics.

    A January 2014 analysis published in the Asian Pacific Journal of Cancer Prevention compared the various types of cabbage — Savoy, Chinese, green heads and red — and found that red cabbage had the greatest antioxidant content.

    This refreshing salad is an excellent source of healthy fats.

    It’s high in fat (23 grams per serving) but about 90 percent is the healthy, unsaturated type. Tahini, olive oil and pecans are all rich in these healthy mono- and polyunsaturated fats.

    The Cabbage Soup Diet is a 7 day meal plan, aimed at achieving fast weight loss with use of a simple cabbage soup recipe.

    It is not a long-term weight loss solution but is known to be effective over the short term.

    Apparently it originally came from a hospital (Sacred Heart Hospital) to stimulate weight loss for surgery patients – but this cannot be verified.

    • 6 large green onions
    • 2 green peppers
    • 1 or 2 cans of tomatoes (diced or whole)
    • 1 bunch celery
    • 1/2 head cabbage
    • 1 package Onion Soup Mix
    • 1 or 2 cubes bouillon (optional)
    • 1 48 oz. can V8
    • Juice (optional)
    • Season to taste (salt, pepper, parsley, curry, garlic powder, etc).

    Cabbage Soup 7 Day Meal Plan

    Day 1
    Homemade cabbage soup, plus any fruit, apart from bananas.
    Day 2
    Homemade cabbage soup, plus other vegetables, including a baked potato with butter for dinner (potatoes are off-limits on other days)
    Day 3
    Homemade cabbage soup, plus other fruits and vegetables.
    Day 4
    Homemade cabbage soup, plus anything up to 6 bananas and fat-free milk.
    Day 5
    Homemade cabbage soup, plus 6 tomatoes and up to 450 grams of meat or fish.
    Day 6
    Homemade cabbage soup, plus meat(beef) and vegetables.

    Exercise Not Encouraged

    Because of the very low calorie nature of the cabbage soup diet, exercise isn’t recommended. Going for a walk could be acceptable, but anything strenuous could be potentially dangerous.

    Summary and Warning

    The biggest drawback of the Cabbage Soup diet plan is the sheer monotony of eating cabbage soup.

    However, some diets basically look at the nutritional properties of the cabbage soup diet and make it more interesting by combining other foods that have the same effect.

    There are also serious concerns regarding the nutritional quality of this diet. On many days, the diet is low in protein, calcium, and essential fatty acids.

    There are also high levels of sodium or MSG (Monosodium Glutamate) when using onion soup mix and bouillon.

    Weight loss will probably occur due to the low calorie intake not because of some magical property of cabbage soup.

    • Start by cutting up all your vegetables. This recipe will be enough for several servings, but you may want to double up if you’re eating it for the whole week.
    • You can combine the full recipe right way, or divide the ingredients into serving-sized containers to store in the fridge. Then you can just add broth and heat up one serving at a time.
    • If you make all the soup right away, then let it cool to room temperature and store it in an airtight container in the fridge. You can heat each serving in the microwave or on the stovetop for a few minutes.


    • Meat: There are a lot of ways you can change up the recipe. To make it more filling, try adding in some meat like chicken, turkey, or beef. It may not be as low in calories, but it will still be healthy and delicious. If you’re starting with raw meat, you’ll want to sauté it for a few minutes ahead of time to get it browned. If you don’t want to add meat, but still want to make the recipe more filling you could cook in some lentils with your Cabbage Soup.
