Life with gastroesophageal reflux disease, or GERD, is no picnic at any time of year, but it can be especially challenging during the holiday season.
Uncomfortable symptoms like heartburn, chest pain, and regurgitation can be brought on by a number of foods, according to the Cleveland Clinic. Unfortunately, some of the most common triggers are present in large quantities in traditional sweet holiday favorites.
“GERD trigger foods vary from person to person, but there are certain foods that tend to be more common triggers,” says Everyday Health’s dietitian, Kelly Kennedy, RD. “When it comes to holiday desserts, some of the common triggers include large quantities of fat, peppermint, chocolate, and citrus.”
Specific types of dessert you’ll likely want to avoid include cream-based desserts, piecrusts, icings, and desserts with chocolate, alcohol, and mint, says Gillian Culbertson, RD, a registered dietitian with Cleveland Clinic’s Center for Human Nutrition. “Think no cheesecake, chocolate cake, mint ice cream, and so on,” she says.
But fear not! GERD is quite common — the American College of Gastroenterologists estimates that about 20 percent of the U.S. population has the condition — and there are plenty of ways you can enjoy holiday sweets without upsetting your stomach.
“While it can be hard to think about forgoing chocolate and peppermint during the holiday season, there are a number of traditional holiday flavors that can fit in perfectly with a GERD-friendly diet,” Kennedy says. “These include ingredients such as nuts, apples, bananas, and oats. Look for foods that aren’t personal triggers for you and enjoy them in small amounts.”
That last point is especially important, as large, heavy meals can also trigger GERD symptoms, according to the American Academy of Allergy, Asthma, and Immunology.
“Also avoid coffee and alcohol, as they increase gastric acid and can lead to reflux,” Culbertson advises. “And of course avoid eating to overfull, wear loose clothing, and stay upright for at least two hours after eating — so no post-meal naps!”

There’s a Downside to All That Greek Yogurt You’re Eating
Greek yogurt may be good for your gut, but figuring out what to do with its biggest waste product can give producers heartburn.
Thick, creamy, high in protein and rich in bacteria that aids digestion, Greek yogurt has been a trendy snack for the past several years. But straining liquid out of the yogurt — the process that makes it so creamy — produces a huge amount of acid whey, a watery dairy byproduct with a pH comparable to tomato juice, wine — or acid rain.
For every 7,000 gallons of milk used in making Greek yogurt, as much as 4,900 gallons of acid whey gets produced, according to a 2013 Cornell University report. The cost of handling and disposing of all that whey is a drag on the industry, which has been a boon to the sagging economy of upstate New York.
But it’s also rich in nutrients and sugars, so researchers hope to figure out ways to cheaply break it apart and sell the components the way other dairy byproducts have been converted to profitable uses.
Cream, for instance, gets sold on its own or made into butter. Even cheesemakers have figured out how to make nutritional supplements out of the less-acidic whey left behind from their work, Cornell University agricultural economist Andrew Novakovic told VICE News.
“The yogurt guys really haven’t come up with a formula yet that allows them to recover much economic value out of the whey that they’re generating,” Novakovic said. “They’re in kind of in a least-loss situation, which is where the cheese industry was 50 years ago. There’s definitely things you can do, not for the lack of technology, but most of these technologies cost more than the value of the product that they make.”

So most acid whey gets dumped on fields as fertilizer or added to animal feed, said Dean Sommer, a cheese and food technologist at the University of Wisconsin’s Center for Dairy Research. But there are limits to how much can be spread onto the land, “because of how much the soil can handle,” Sommer told VICE News. “They don’t want it running off into streams and such.”
Previous whey spills have been blamed for killing thousands of fish as the organic material decays, depleting the surrounding water of oxygen — a problem that’s not unique to acid whey. In 2011, the owner of a hog farm in Ohio was sentenced to six months in prison and fined more than $50,000 for letting thousands of gallons of cheese whey spill into a nearby creek, killing more than 36,000 fish.
Acid whey isn’t exactly tasty, but it’s not toxic when eaten; it sometimes rises to the top of a yogurt container before it’s opened, Novakovic said. “It will have a little tartness to it, but it’s not going to burn your tongue.”
It’s also rich in proteins, calcium and milk sugars, Sommer said. It’s those compounds that researchers hope to extract.
“We believe we can grab some of the lactic acid out of the acid whey and utilize the lactose from it,” he said. “There’s a lot of things in there that in of themselves that have value,” he said. “The problem is that when they’re all mixed together in this thing that we call ‘acid whey,’ they’re problematic.”
Acid whey can also be used to produce galactose, a sugar that may help the gastrically challenged. “Lot of people are lactose-intolerant but can tolerate galactose,” Sommer told VICE News.

Chobani, the biggest player in the Greek yogurt market, found another use for the waste in a massive plant it built in Twin Falls, Idaho. The company uses reverse osmosis to extract water from the whey, using the liquid for cleaning and leaving the remainder in a more concentrated form. That means it draws about 20 percent less water from city reservoirs and runs fewer trucks to get rid of the remainder, the company said.
And some acid whey has been used in anaerobic digesters — devices that mimic the human digestive system, breaking down organic material and producing methane, which can be burned as fuel. But don’t expect it to become the next miracle fuel, Novakovic told VICE News.
“Whey is mostly water,” he said. “You’ve got to get rid of this water first, and if you just use whey only as a raw material it’d be really inefficient. But if you mix it in with a whole bunch of manure, then it kind of balances out.”

About 20% of the population has gastroesophageal reflux disease (GERD), a chronic acid reflux condition that’s diagnosed by a doctor.
Normally, the esophageal sphincter (a muscular tube that lets food pass into the stomach and then cinches shut to block it from coming back up) protects the esophagus from stomach acid. However, if the sphincter relaxes, food can push upward through the loosened opening and cause acid reflux.
“Diet plays a major role in controlling acid reflux symptoms and is the first line of therapy used for people with GERD,” says Ekta Gupta, M.B.B.S., M.D., gastroenterologist with Johns Hopkins Medicine.
Foods That May Cause Heartburn
Foods commonly known to be heartburn triggers cause the esophageal sphincter to relax and delay the digestive process, letting food sit in the stomach longer, says Gupta. The worst culprits? Foods that are high in fat, salt or spice such as:
- Fried food
- Fast food
- Potato chips and other processed snacks
- Chili powder and pepper (white, black, cayenne)
- Fatty meats such as bacon and sausage
Other foods that can cause the same problem include:

“Moderation is key since many people may not be able to or want to completely eliminate these foods,” says Gupta. “But try to avoid eating problem foods late in the evening closer to bedtime, so they’re not sitting in your stomach and then coming up your esophagus when you lay down at night. It’s also a good idea to eat small frequent meals instead of bigger, heavier meals and avoid late-night dinners and bedtime snacks.”

Does milk help with heartburn? “Milk is often thought to relieve heartburn,” says Gupta. “But you have to keep in mind that milk comes in different varieties — whole milk with the full amount of fat, 2% fat, and skim or nonfat milk. The fat in milk can aggravate acid reflux. But nonfat milk can act as a temporary buffer between the stomach lining and acidic stomach contents and provide immediate relief of heartburn symptoms.” Low-fat yogurt has the same soothing qualities along with a healthy dose of probiotics (good bacteria that enhance digestion).
Ginger is one of the best digestive aids because of its medicinal properties. It’s alkaline in nature and anti-inflammatory, which eases irritation in the digestive tract. Try sipping ginger tea when you feel heartburn coming on.
Apple cider vinegar
While there isn’t enough research to prove that drinking apple cider vinegar works for acid reflux, many people swear that it helps. However, you should never drink it at full concentration because it’s a strong acid that can irritate the esophagus. Instead, put a small amount in warm water and drink it with meals.
Lemon juice is generally considered very acidic, but a small amount of lemon juice mixed with warm water and honey has an alkalizing effect that neutralizes stomach acid. Also, honey has natural antioxidants, which protect the health of cells.

Greek Yogurt’s Dark Side: Acid Whey
These days, the Internet is aflutter with talk of a mysterious byproduct of Greek yogurt called acid whey. An article in Modern Farmer recently brought the unsavory-sounding slop to light, and it’s not pretty.
Here’s the deal: it takes a lot of milk—four ounces, the article reports—to make a single ounce of Greek yogurt. And once it’s fermented on a large scale, the mountain of whey is more than a little problematic. Acid whey is toxic to the environment and kills off aquatic life, so it can’t be dumped, and cattle can only tolerate it in their feed up to a point. In the meantime, there’s an ocean of surplus.
The Greek yogurt manufacturer Chobani revealed, in response to the Modern Farmer article, that they dispose of acid whey by returning it “to farmers, most of whom use it as a supplement to their livestock feed. Some is used as a land-applied fertilizer but only at farms that have nutrient management plans in place with the state environmental conservation agency. A small percentage is also sent to community digesters, where the whey is used to produce energy.”
