One of the most important components that affect the quality of beef is the fattening of bulls. The structure, marbling and taste of meat depend on what exactly animals eat. Let us consider in more detail how grain fattening differs from grass fattening.

First, a little historical background. A few centuries ago, cows ate exclusively herbal food. They grazed in natural conditions on the purest meadows. In the Middle Ages, no one fed grain to animals, as it was not necessary – there were plenty of free grazing areas. As time went on, farms developed. The free grazing of cows was gradually limited by the decreasing pasture area. So, animals began to be fed grain food and it was quite justified. Farmers realized that when adding grain feed, bulls gain weight faster, while the quality of meat does not deteriorate, and on the contrary, beef acquires a more fibrous structure, becomes softer and juicier.

Grass fed

It should be said right away that we are talking only about meat breeds of cows. In Russia, there is no grass-fed culture as such. Grass-fed beef, which is found in our country, is actually a mixture of meat and dairy breeds. The taste of this meat is significantly different from real steaks, which are made from gobies of purebred meat breeds, such as Black Angus, Hereford, Shorthorn breeds, etc. It is inappropriate to compare the beef of these two types: these are two completely different types of meat. So how does grass-fed actually work? All bulls after birth feed on mother’s milk, then they graze in meadows with fresh juicy grass until they reach the age of 6-8 months. By the way, gobies are sent not to any meadows, but specially sown by the manufacturer. All this is done to ensure that the animals receive only healthy and proper nutrition. At this time, the bulls almost do not gain weight, do not become large. After that, the animals are either transferred to grain fattening, or sent for slaughter – then the marbled beef will be marked with the grass fed symbol.

Thus, it is fair to say that all gobies initially feed on grass and hay, and only then some of them continue to be grown with the addition of grain to the diet.

About grain feeding

Real marbling of meat is achieved only with grain fattening of bulls. Most often, the fattening of bulls of meat breeds is optimally balanced. As we have already noted, young calves graze in meadows and feed on grass for six months, then the animals are placed on fidlots – specially equipped stalls with limited space. This is necessary so that the bulls move less and gain weight faster. At this time, animals begin to be fed with cereals, corn, and concentrated and mineral feed is also added to the diet to maintain a balance of nutrients. Corn and cereals contain a large amount of fiber, which, when consumed, produces intramuscular fat in cows, which is called “marbling”.

In Russia, such gobies are bred in the Bryansk, Voronezh, Oryol, Tula, Smolensk regions. The duration of fattening is from 90 to 200 days. During this time, the bull-calf gains the optimal amount of fat, which, thanks to the care and proper maintenance of animals, is evenly distributed throughout the carcass. As a result, producers receive premium-class meat with a high degree of marbling – soft, juicy, with an ideal structure. If you are a fan of tender, melt-in-your-mouth marbled beef steaks, then grain-fed is just what you need. It is these steaks that are now offered by the best restaurants in Russia.

Important fact

Opponents of marbled meat call it fatty and unhealthy, and even more harmful to the figure. “This is solid cholesterol”, “Such meat is contraindicated if you follow the figure”, “Even in appearance this meat is solid fat” – they say. However, all these assumptions are just a personal opinion, not supported by any evidence. And we, in turn, will give several facts proven by scientists that will dispel any myth.

1. Marbled beef contains essential nutrients: proteins, fats and carbohydrates. Moreover, the composition of the protein includes amino acids necessary for humans. And the bulk of intermuscular fat is represented by useful unsaturated fatty acids – omega-3, omega-6, etc.
2. In marbled beef, a small amount of cholesterol is 40 mg per 100 g of meat (while in lean beef of dairy cows, this figure exceeds 50 mg per 100 g of meat). If you eat steaks in moderation, then you definitely won’t bring any harm to your health.
3. And now a fact for those who follow their harmony. 100 grams of marbled beef contains only 200-250 kcal! For meat, this is a very low figure. For example, in ordinary pork, the calorie content is the same ~ 250 kcal per 100 g of product.
4. Marble beef is a source of choline, thiamine, folic acid and other B vitamins. Together with other beneficial substances, they improve the body’s metabolism, help strengthen the cardiovascular system and increase immunity. Not bad for an insanely delicious product!

Controversy between Grass and Grass Feeders

There are grass-fed advocates in America who argue that cows are herbivores and should only eat plant foods, not grains. In addition, they have to stay on the feedlots for quite a long time, so they feel uncomfortable due to the limited space.

Actually it is not. If the feedlot is well equipped, it is dry and warm, and fresh air enters it, the animal feels great (especially in harsh Russian winters). Regarding grain: it is for bulls as ice cream is for a person. The diet of animals cannot consist only of grains, as well as people – only of sweets. Therefore, in fact, cows are fed a balanced grain-based compound feed, which contains all the necessary elements for the health of the animal.
